
After aging 6 years sur lattes, Jonas and I have disgorged 100 magnum bottles of our estate grown Blanc de Blancs 2014 Method Traditional for you to enjoy. Aged in our cellar, we're offering these bottles for $100 + tax and bottle deposit.
Chardonnay vines grown in our Hillier Clay-Loam soils truly produce a remarkable sparkling wine and just like its predecessors Rosé & Les Etoiles, 2014 turned out to be an excellent vintage for the Blanc De Blancs.
We aged the Chardonnay in 500L x 5 year old barrels (to avoid oak flavours in the wine yet still obtain the other benefits of barrel) for 10 months prior to tirage. The Blanc de Blancs aged sur lattes (in bottle) for 36 months until the first disgorgement on Monday November 12th, 2018.
The nose is very mineral and rich with wet limestone. The palate is clean and creamy with a lively mousse.
