Borealis 2017 Method Charmat Rosé
The expected shipping date of the 2017 vintage of the Borealis rosé charmat method is the week of Monday February 5th.
Named after the breathtaking pink Aurora Borealis we saw while picking Chardonnay on Danny Lenko’s farm at night on October 30th, 2003.
Essentially the pink partner to the Whitecap Method Charmat but we thought of this one first!
Made with the Gamay noir grape, the Borealis has aromas of fresh berries, spicy hints of white pepper and toasty brioche. The Borealis is dry on the palate and surprisingly rich for a charmat method wine and displays lots of depth from daily lees stirring during the 40 day fermentation.
The excellent acidity and persistent bubbles lead to a long, fresh, mineral finish. Delicious summer sipper, with or without food!
