Made from only the softly pressed grapes of our estate grown Chardonnay (55%) and Pinot Noir (45%), the nose has clean perfumed aromatics of pome fruit, citrus, and brioche. The palate is dry (brut), fresh, crisp and concentrated with good mid-palate and significant length. The bubble is small, tight and persistent. This wine simultaneously manages to exude power and grace.
Our extended-aged Les Etoiles was aged in bottle for 78 months before we began the process of riddling & disgorging. Only the tiniest dosage of 1g/L was added. We recommend waiting until winter 2023/2024 to enjoy, it'll be worth the wait.
