The 2011 Sacrament is a method traditional sparking wine, consisting of a field blend of 50% Pinot Noir and 50% Chardonnay from our best fruit from the 2011 vintage.
The inspiration for the Sacrament came from our marriage. In Quebec, the term Sacrament is a swear word, and the sacrament of marriage (with a winery added to the union) can be challenging and cause us to shout out a few expletives. Nonetheless, our union is something to celebrate.
The Sacrament is made from our finest grapes, field blended in a 50% mix of both Chardonnay and Pinot Noir. Aged for 60 months, the Sacrament has surpassed our expectations in quality, aromatics and flavour profile. We're in awe of this wine.
Please lay this wine down for at least a year before drinking. Drinking it now would be akin to smelling a rose before it is in full bloom so please wait as long as you can!
Only 100 cases produced. Truly a wine to save for a special occasion (even for your wedding anniversary!).
