The Traditional Method is the process of inducing a second fermentation inside an already bottled wine by adding more yeast and sugar. It was first documented in England by Christopher Merret in 1662 as a form of improving French wine that had spoiled in its water-bound journey from France to England. In 1668, Dom Perignon, a Benedictine monk living in Champagne, France, popularized the art of Traditional Method wines, later known as “Méthode Champenoise.” The Hinterland estate produces grapes that are perfectly balanced in acidity with low sugars, ideal for Traditional Method wines.

Pinot Gris has mace (spice) and malic acidity on the nose and flavours of white pepper, yellow apples, kiwi, and an aftertaste of raw honey. Pinot Gris is lovely on its own, but serve it with fried chicken and waffles, marmalade-baked brie, or charcuterie for the perfect pairing!
