In 2017 we allocated a small amount of estate grown Chardonnay and Pinot Noir in equal parts for an experimental Pet-Nat and then promptly forgot about it. Delightful spritz on the palate, biscuity aromatics and a peachy rosé hue.
We don't enjoy exploding Pet-Nats which is why we aimed for a lower carbonation, hence the name. We recommend chilling it upright to allow the lees to settle before opening.
