We're kicking off 2026 with our most significant and perhaps the best wine we'll release this year: the recently disgorged Les Etoiles Method Traditional from the stellar 2018 vintage.
Even though it is brut zero (no dosage), it has a palate of crisp apple with the richness of honey, and finishes with a lively mineral acidity. Les Etoiles has a beautiful gold colour with complex aromatics of toasted brioche, baked apple, and honeysuckle.
We held back 500 bottles and disgorged the wine in January after 66 months of aging on the lees (sur lattes).
